Here’s a little recipe I came across that has worked in some healthier alternatives and turns out delicious.
2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 1/2 cup pumpkin puree
1/4 cup plain Greek or Icelandic yogurt
1/2 cup maple syrup
1/4 cup olive oil
2 Tbs. unsalted pumpkin seeds
1️⃣ Preheat oven to 350°.
2️⃣ Prepare a 8″ x 4″ loaf pan.
3️⃣ In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
4️⃣ Add the pumpkin puree, eggs, yogurt, maple syrup, and oil.
5️⃣ Stir until just moistened.
6️⃣ Spread into the pan.
7️⃣ Sprinkle pumpkin seeds on top
8️⃣ Bake for 40-50 minutes, or until the top is brown and a toothpick inserted into the center comes out clean.
